Fish and vegetable potato pie

This was one of those spontaneous meals where I just added bits and bobs from the kitchen. The top had a slight crunch and was nice and cheesy. Then the filling was a lovely, creamy mixture of succulent fish and tasty vegetables. A nice dish for all the family!

Prep and cooking time approx: 50-60 minutes

Ingredients

Potato, peeled and cut into cubes

Cheese, grated

Fish, cut into chunks

Oil

Sprinkle of salt and pepper

Broccoli, cut into florets

Cauliflower, cut into florets

Sweetcorn

Peas

Vegetable stock

Coconut milk

Method

  • Bring the potatoes to boil, drain once done and mash along with the cheese.
  • Add the vegetable stock, coconut milk, salt and pepper to a pan on a medium heat. Once simmering add the fish and vegetables for 10-13 minutes on a gentle simmer.
  • Preheat the oven to gas mark 6 and set aside an oven dish. Once the liquid has reduced place in the oven dish and cover with the cheesy potato mash.
  • Place in the oven for 30 minutes until golden brown.
  • Once cooked, serve and leave to cool down for a few minutes before eating.

Quinoa and prawn salad

Today I’m sharing one of my favourite meals… Quinoa and Prawns. This was so delicious and the range of colours are amazing. I really believe we eat with our eyes and for me this dish is the perfect example of that. There’s red, orange, yellow and green just like the rainbow, plus, having a range of colours ensures a variety of nutrients which is a bonus!

Ingredients list is a rough guide as nothing was measured

Cooking time approx: 25 minutes

Ingredients

Quinoa

Turmeric

Vegetable stock

Tomato puree

Sweetcorn

Spinach, shredded

Oil

Prawns

Sprinkle of salt and pepper

Brussels sprouts, shredded

Red bell pepper, diced

Carrot, sliced

Spring onion, finely sliced

Pumpkin seeds

Desiccated coconut

Method

  • Cook the quinoa according to packet instructions with the addition of turmeric, vegetable stock, tomato puree, sweetcorn and spinach.
  • When the quinoa is almost done, heat the oil in a pan and once hot add the prawns with some salt and pepper. After a few minutes stir in the sprouts, pepper, carrot, spring onion, pumpkin seeds and coconut cooking for a further 2-3 minutes.
  • Combine both pans together and mix well.
  • Serve in your favourite bowl and enjoy.

Salmon quinoa bowl

Hey Everyone, I hope your day has been well.

Today I made this super tasty salmon quinoa bowl. You can’t really see the quinoa mixture but trust me, there is so much goodness underneath. I haven’t actually cooked quinoa in a long time but this dish made me realise why I liked it so much. The grains are light and not too heavy on the stomach. The salmon was cooked in the air fryer, maybe for a few minutes too long but I’m still getting used to the time and temperature.

As always, you can adjust the ingredients depending on how many portions you want. For me this is a delicious summer dish filled with nutritious vegetables and salads.

Makes 1 portion

Cooking time approx:

Ingredients

1 salmon fillet

1 tbsp barbecue sauce

Sprinkle of garlic powder, chilli powder, paprika and salt

1 serving of quinoa

Sprinkle of turmeric and cayenne pepper

1 tsp tomato puree

1/4 of vegetable stock cube

1/2 tsp oil

1/3 spring onion, finely sliced

1/3 carrot, peeled

1/5 red bell pepper, diced

5 sprouts, finely shredded

Handful of spinach, finely shredded

Method

  • Season the salmon with barbecue sauce, garlic powder, chilli powder, paprika and salt. Rub everything in and then place in a air fryer to cook or bake in the oven until done.
  • In the meantime, cook the quinoa according to packet instructions adding in the turmeric, cayenne pepper, tomato puree and vegetable stock.
  • Prepare all of the vegetables and in a separate pan heat the oil and saute the spring onion, carrot, pepper, sprouts and spinach for 3-4 minutes until slightly softened.
  • Once the quinoa is cooked, fluff up with a fork and mix in the sautéed vegetables.
  • Place the quinoa mix into a bowl, place the salmon on top and enjoy.
