Double chocolate chip orange biscuits

I was going through a chocolate orange phase so after making the chocolate orange cake, I decided to make these super tasty chocolate orange biscuits. They are light and fluffy with a delicate taste of orange. To be honest, I’ve never used orange zest in cookies or biscuits before as its usually added in cake but I thought I’d try it out and the end result was great.

I always like baking on a Sunday so I can have a nice homemade treat during the week and carry some to work. Also, things always taste so much better when they’re homemade, this was a nice recipe to follow and only took 15 to bake in the oven. I’ve used vanilla essence in this recipe but the extract will work just as good.

Ingredients (makes 12)

100g butter

150g sugar

1 egg

1 tsp vanilla essence

150g self raising flour

1/2 tsp baking powder

20g cocoa powder

50g milk chocolate, chopped

1 orange zested

Method

  • First, preheat the oven to gas mark 5 and line a tray with baking paper.
  • Cream the butter and sugar together in a large bowl. Add the vanilla essence and eggs mixing well.
  • Sift in the flour and cocoa powder mixing until it forms a thick mixture.
  • Add in the chocolate and zest before evenly placing onto a baking tray.
  • Bake in the oven for 15 minutes until fully cooked and leave to cool before eating.

Mini walnut and spelt cookies

I really fancied baking today so I made some mini walnut and spelt flake cookies. A bit of a freestyle recipe but they turned out really well. This is what I end up baking when I want to be somewhat healthy. I soaked the spelt oats before baking as they are quite hard and the walnuts were chopped small. The end result was a soft cookie with a great taste. A nice little treat to snack on during the day and really quick and easy to make.

Ingredients (makes 15)

110g butter

50g sugar

135g plain flour

4 walnuts, chopped

2 tbsp spelt flakes, soaked in water

1 tbsp caramel sauce

Method

  • Firstly, preheat the oven to gas mark 5 and line 2 baking tray with parchment paper.
  • Cream the butter and sugar until pale, then mix in the flour, walnuts, spelt flakes and caramel sauce.
  • Evenly spoon onto the baking tray and bake in the oven for 15 minutes.
  • They should be lightly golden on top but still soft inside.

Spooky Skeleton Biscuits

Hey Everyone, I hope your day has been well.

I’ve been using baking kits recently and honestly they just save so much time but you can still have a lot of fun with it. These are super simple chocolate flavoured biscuits that are perfect for little kids to make as it includes rolling out the dough, using cookie cutters and designing the faces.

This baking kit was from ‘Zac and Lily’ and all I needed was some butter. Baking for me is one of those things that brings me so much joy because I’m soley focused on the task and I enjoy the process of creation, even when it’s not fully from scratch!!

A great tip when making biscuits is once you’ve rolled abd cut out the shapes, leave them in the fridge for at least 30 minutes so that they can firm up and hold the shape when baking. I can’t lie, icing the skeletal designs on top is quite tricky and you have to be so precise. They tasted amazing with a delicate chocolate flavour.

Walnut Raisin Cookies

A nice and quick cookie recipe perfect for when you fancy something sweet but homemade. I’ve added some raisins and chopped walnuts for extra flavour and crunch. These cookies taste amazing, very easy to make and great for sharing or as a quick snack at work.

These cookies are eggless and I really like that this recipe makes 6, so you can keep them in an airtight container and eat throughout the week. Also, walnuts and raisins are great foods to eat during your luteal phase. These cookies taste amazing, light and airy but slightly crunchy on the outside.

Ingredients (makes 6)

65g butter

55g sugar

1/2 tsp vanilla extract

110g self raising flour

1/3 tsp baking powder

40g walnuts

20g raisins

Method

  • Preheat the oven to gas mark 5 and line a baking tray with parchment paper.
  • Cream the butter and sugar together until pale and creamy then mix in the vanilla extract.
  • Gently fold in the flour and baking powder to fold a loose dough.
  • Use your hands next to form a smooth dough adding in the chopped walnuts and raisins.
  • Equally divide the dough into 6 and form into cookie shapes placing each one on the tray.
  • Once all are done, bake in the oven for 13-15 minutes.
  • Leave to cool completely on a wire rack.

White Chocolate Chip Cookies

Today I’m sharing a tasty white chocolate chip cookie recipe, as you’ll know, I always love adding extra ingredients like oats or walnuts for an added crunch and nutrition and they both compliment these cookies so well. They are not too sweet and can be eaten slightly warm with ice-cream or custard for a delicious dessert.

Recipe: white chocolate chip cookies (makes 16)

Ingredients

100g butter

110g soft brown sugar

1 egg

1/2 tsp vanilla extract

150g self raising flour

1/2 tsp baking powder

1 tbsp white chocolate chips

1 tbsp oats

1 tbsp walnuts, chopped

Method

  • Preheat the oven to gas mark 5 and line 2 trays with baking paper.
  • Cream the butter and sugar together then add the egg and vanilla extract.
  • Sift in the flour and baking powder into the bowl and gently fold in. Next add the chocolate chips, oats and walnuts, combining well.
  • Equally spoon the cookie mixture onto the trays and bake in the oven for 20 minutes.
  • Leave to cool down before eating.
