Hey Everyone, I hope your day has been well.
Today I’m sharing one of my favourite breakfast meals. It’s mostly the egg and plantain but the beans brings it all together with the sweet sauce. It depends how hungry you are with the amount of ingredients you want to use but below is my average portion. Sometimes I’ll have some toast on the side but this day I went without.
Ingredients
1 tbsp oil
1/2 plantain, sliced
1 egg
1/3 tin baked bean
Sprinkle of salt and pepper
Method
- Heat the oil in a frying pan and once hot add the plantain turning after 4-5 until golden brown.
- Once the plantain is done, place on kitchen paper to drain off excess oil.
- Heat the beans up in a separate pot, adding some black pepper.
- Scramble the egg in the same frying pan sprinkling in some salt and pepper.
- Once everything is done serve on a plate and enjoy.
