Quick French Toast

Hey Everyone, I hope your day has been well.

Today I make French toast! Something I make every now and then but this time using seeded bread for those additional nutrients. It’s quick and something you could easily make in the mornings before work. Topped off with some fresh strawberries and a hearty drizzle of maple syrup.

I ate this for breakfast but it would be a lovely dessert too. Also, any berries of your choice would go well.

Makes 1 portion

Ingredients

2 eggs

2 slices of seeded bread

1/2 tsp oil (or spray oil)

6 sliced trawberries

Heaped tbsp maple syrup

Method

  • Heat oil in a pan and in the meantime whisk 2 eggs together.
  • Cut the bread in half and add to the mixed eggs. Repeating with all slices.
  • Once the pan is hot, add each soaked bread to the pan cooking for 4-5 minutes on each side until fully cooked and lightly golden.
  • Place the cooked French toast on a plate, add the sliced strawberries and drizzle with maple syrup.
  • Enjoy warm!

Double chocolate chip orange biscuits

I was going through a chocolate orange phase so after making the chocolate orange cake, I decided to make these super tasty chocolate orange biscuits. They are light and fluffy with a delicate taste of orange. To be honest, I’ve never used orange zest in cookies or biscuits before as its usually added in cake but I thought I’d try it out and the end result was great.

I always like baking on a Sunday so I can have a nice homemade treat during the week and carry some to work. Also, things always taste so much better when they’re homemade, this was a nice recipe to follow and only took 15 to bake in the oven. I’ve used vanilla essence in this recipe but the extract will work just as good.

Ingredients (makes 12)

100g butter

150g sugar

1 egg

1 tsp vanilla essence

150g self raising flour

1/2 tsp baking powder

20g cocoa powder

50g milk chocolate, chopped

1 orange zested

Method

  • First, preheat the oven to gas mark 5 and line a tray with baking paper.
  • Cream the butter and sugar together in a large bowl. Add the vanilla essence and eggs mixing well.
  • Sift in the flour and cocoa powder mixing until it forms a thick mixture.
  • Add in the chocolate and zest before evenly placing onto a baking tray.
  • Bake in the oven for 15 minutes until fully cooked and leave to cool before eating.

Chocolate and Pecan Garlands

Hey Everyone, I hope your day has been well and you enjoy the extra long Bank Holiday weekend ahead.

A few days ago, I decided to bake some garlands. Something a little different to what I would usually bake but I was so pleased with the end result. Firstly, I can’t take all the credit because I actually used the BakedIn delivery box but the effort I put in was definitely worth it. The chocolate spread in the middle is absolutely divine, quite rich alone as it’s dark chocolate but subtle alongside the dough.

I definitely had to freeze some of these as I just couldn’t stop eating them 🙂 I did cook the sugar syrup for a little too long but aside from that they turned out pretty well!

Ingredients (makes 16)

500g strong white flour

2 tsp yeast

60g caster sugar

3/4 tsp salt

50g dark chocolate chips

30g cocoa powder

30g icing sugar

20g pecans

45g caster sugar

Extra flour for dusting

Homemade Apple Crumble with Coconut Sugar

Hey Everyone, I hope your day has been well.

This apple crumble was a bit dry, I kind of freestyle the ingredients but I think it needed a little more butter to make the crumble not so dry but aside from that it’s okay. I’ve use coconut sugar which looks like soft brown sugar and gives this crumble the dark colour. This crumble is not sweet so would go down a treat with lovely warm custard or vanilla ice cream.


Ingredients

4 apples

Cinnamon powder

Optional: 1 tbsp lemon juice

70g butter

50g coconut sugar

120g plain flour

120g oats

Method

  • Preheat the oven to gas mark 6 and set aside an oven tray.
  • Wash, peal and finely slice the apples, layer in the bottom of the oven dish sprinkling with cinnamon powder. Add a small splash of lemon juice to stop the apples browning.
  • Next, make the crumble my mixing the butter, sugar, flour and oats together until it resembles bread crumbs.
  • Sprinkle the crumble mixture over the apples and press down slightly.
  • Bake in the oven for 40-45 minutes until golden brown, leaving to cool down before eating.

Apple Crumble

So I made an apple crumble one Sunday morning and I realised I’ve never shared a recipe on my blog. I don’t make crumbles that often however, I’ve made quite a few apple based dishes in the past. This recipe was perfect for me and my family, not too much apple and a golden crumble topping with the addition of oats for extra crunch. Apple crumble is a great autumn dessert because it’s so warming and apples are in season. Not only that, it’s super versatile and can be eaten alone, with custard, ice cream or clotted cream. Why not make this for your dessert today!

Recipe: Apple crumble (serves 4)

Ingredients

4 apples, wash and peel

1/3 tsp cinnamon powder

125g plain flour

50g oats

80g brown sugar

110g butter, cubed

Method

  • Preheat the oven to gas mark 6 and get a medium sized square oven dish.
  • Wash and peel the apples, slice thinly and put into the over dish, sprinkling over the cinnamon.
  • In a large bowl, mix the flour, oats and sugar together then rub in the butter using your fingers until it resembles large breadcrumbs.
  • Sprinkle the flour mix over the apples and bake in the oven for 35-40 minutes until golden brown on top.
  • Leave to cool down slightly before eating alone, with custard, ice cream or clotted cream.
