Vegetarian Biryani

I’ve had this biryani recipe in my Bookmarks for the longest time and I finally decided to make it. Very easy recipe to follow from Feasting at Home and it tasted absolutely delicious with all of the spices coating the ingredients. I love that it is vegetarian and you could pretty much add whichever vegetables you like but I decided to stick with the original recipe. I know that I’ll be making this again and will maybe add in some peas, cauliflower, sweet potato or whatever veg is in the fridge really.

I always love trying out new recipes and this was perfect for me especially as the rice is cooked along with all the other ingredients compared to cooking it alone as I would usually do. It’s also a one pot dish so you save time on the washing up. I adapted the recipe slightly to what was in the kitchen. Don’t forget you can always add in some meat as well, just remember to sear it first before adding to the mixture.

I didn’t follow the measurements completely, but I used what would be enough for 1 portion and I had a little leftover for the next day. Always remember with cooking, you can be as creative as you like. I did add in a sprinkle of salt but next I won’t bother as you have salt from the vegetable stock. This meal was so colourful and amazing, a perfect dish when hosting or bringing to family gatherings.

Salt (not really needed)

Chickpeas

Curried Lentils and Rice

So when I was making this recipe I never had curry powder in the cupboard so I looked online and found a mixture of spices (turmeric, cumin, coriander and ginger) that when combined make a great curry alternative. I have really been enjoying eating lentils recently, they have an earthy and nutty flavour to them that would really compliment any dish.

Lentils are a great staple food to have in your cupboard because you can sprinkle them into most dishes, like curries, soup or any rice dish. They are a great source of fibre and protein and a healthy gluten free option. This recipe overall is full of flavour and definitely one to try!!

Recipe: Curried rice and lentils (serves 1-2)

Ingredients

1 tsp olive oil

1/4 small onion, finely diced

1/2 tsp curry powder (or an even mixture of turmeric, cumin, coriander and ginger)

Sprinkle of thyme and salt

300ml boiling water (you may need more)

48g lentils

64g rice

Method

  • Heat the oil in a pot for 1 minute before adding the onion, cook this for 5 minutes on a low heat stirring regularly. Add the curry powder, thyme and salt, cover with a lid for 2 minutes to continue cooking.
  • The onions should be slightly soft at the point, add the boiling water to the pot and bring to boil.
  • Next add the lentils and rice, leave on a gentle simmer until fully cooked, roughly 20 minutes but keep checking.
  • Give the ingredients a final mix to combine everything together and serve.

Spicy Lamb Kebabs

This recipe is a little different with a Middle Eastern and Caribbean mixture of seasons, these lamb kebab sticks are well seasoned and are perfect for a barbecue especially in this warm weather!! Because of the spiciness they pair well with a plain yogurt dipping sauce. 

Ingredients
½ tsp chilli powder
½ tsp curry powder
½ tsp turmeric
½ tsp garama masala
2 tbsp lemon juice
sprinkle of salt and pepper
4 lamb steaks (diced)

Method

1. Set the oven to gas mark 5 and take out 10 cocktail sticks and put in the oven tray.

2. In a large bowl mix everything together meat and spices and leave to marinade for 30 minutes.

3. Push a few chunks of diced lamb onto each cocktail stick and place in the oven covered with tin foil, cook in the oven for 30 minutes then take off the foil and cook for a further 10-15 minutes until cooked and tender.

– These spicy kebab sticks can be served with rice and a cool yogurt dip.
