Red Velvet Cupcakes with Cream Cheese

Hi guys, the last time I tried to make a red velvet cake I was not as successful but these cupcakes are fantastic. When ever decorating with a sweet top I try to make sure the actual cake mixture is not too sweet so when you bite into the cupcake there’s a subtle sweetness from the cream cheese. 

I even used matching red cupcake cases

On top I’ve added some sugar coloured crystals which looked great in the pictures.

Oreo Cupcakes

Hey everyone, so I had a box of chocolate Oreos in the cupboard for ages because wasn’t quite sure what I wanted to bake with them. Then I just decided on Oreo Cupcakes!! The recipe is super simple and the buttetcream is actually to die for, like it tastes so so good and isn’t too sweet. These cupcakes would definitely go down well for the festive seasonal parties.

Makes 12

Ingredients
200g plain flour
40g cocoa powder
250g caster sugar
2 tsp baking powder
Pinch of salt
80g butter, at room temperature
240ml milk
½ tsp vanilla extract
6 Oreo biscuits

Buttercream
4 Oreo biscuits, smashed up
100g butter at room temperature
250g icing sugar

Method

1. Preheat the oven to gas mark 4 and place 12 cupcake cases into the cupcake tray holes.

2. In a large bowl, add the flour, sugar, cocoa powder, baking powder and salt then mix well.

3. Next melt the butter and add to a jug with the milk, eggs and vanilla extract, whisk well and slowly pour into the flour mix stirring well until it turns to a smooth consistency.

4. Evenly distribute the cake mixture between the cupcake cases about 2/3’s full. Bake in the oven for 25 mins and leave to cool down fully.

5. Whilst the cupcakes are baking make the buttercream by mixing together all the ingredients and leave in a piping bag.

6. Once baked and completely cool pipe the buttercream onto the cupcakes equally then twist the Oreo biscuits in half and place each half on top of a cupcake.

All done, now you can relax and enjoy the cupcakes!!

Cute Carrot Cupcakes

A little on the healthy side with the addition of carrots and makes lovely moist cupcakes.


Ingredients
175g light sugar
200g self raising flour
1 tsp bicarbonate soda
2 tsp mixed spices
Zest and juice of 1 orange
2 eggs
150ml sunflower oil
200g carrots

Method
1. Set the oven to gas mark 4 and prepare 12 cupcake cases into a muffin tin.

2. In a large bowl mix the sugar, flour, bicarbonate, mixed spices and zest together. Next in a separate bowl whisk together the eggs, oil and orange juice then stir into the dry ingredients adding the grated carrot last.

3. Evenly divide the mixture between the cupcake cases and bake in the oven for 25-30 minutes.

A super nice, quick and easy recipe, this would also taste great topped with a cream cheese frosting!!!

Rose Water Cupcakes

I didn’t find a rose but I did find this little purple flower. Cupcakes are so much fun to bake and I feel like you can try many varieties and flavours, this recipe is a super basic sponge with a rose water flavour. They are perfect for birthday parties, sleepovers or just to enjoy with a cup of tea. The appearance is quite plain but they do taste amazing, sometimes it’s nice to keep recipes simple.

Makes 12

INGREDIENTS
125g butter
125g caster sugar
3 tbsp rose water
2 eggs
150g self raising flour
Icing sugar

METHOD
1. Preheat the oven to gas mark 4 and put 12 cases into a cupcake tin. Beat the butter and sugar together until pale, next add the rose water 1 tbsp at a time (make sure the mixture doesn’t split).

2. Then add the eggs one at a time mixing well, sift in the flour and combine gently.

3. Use a tbsp to divide the mixture between each cupcake case and bake in the oven for 20 minutes, until risen and golden brown.

4. Immediately after taking them out of the oven sprinkle with icing sugar.

Chocolate Cupcakes With Coconut Flavoured Frosting

This recipe was quite random, I had the intention of baking cookies but made cupcakes instead. The quantity of the ingredients means the cupcakes are quite dense and filling. Topped with a light coconut frosting using organic coconut powder. I had a few sample sachets from the company Purely Super Foods and decided to use the coconut one for my bakes. Ingredients
200g butter
200g soft dark brown sugar
2 eggs
1 tsp vanilla extract
200g plain flour
60g cocoa powder
1/2 tsp bicarbonate soda

(Basic buttercream)

Method
1. Preheat the oven to gas mark 4 and prepare a tray with 12 cupcake cases.

2. Combine the butter and sugar in a large bowl until fluffy, add the egg and vanilla extract mixing until smooth.

3. Sift in the flour, cocoa powder and beat until well combined.

4. Next evenly distribute the mixture between the cases and bake in the oven for 25- 30 minutes.

5. In the meantime make the frosting using the coconut powder and set aside, once the cupcakes are done leave to cool then cover with the frosting and any topping of your choice.

Lemon and Orange Jelly Sliced Cupcakes

Oh it’s been so long since I’ve baked something, I hate when I get busy and forget to make time to do the things I enjoy.

Ingredients
150g butter, softened
150g brown sugar
2 eggs
150g self-raising flour
3 tbsp milk

Topping
100g butter
2 tbsp honey
150g icing sugar
Lemon and orange jelly slices

Method
1. Preheat the oven to gas mark 4 and place 12 cupcake cases in a 12 hole tray.

2. Beat together the butter and brown sugar until pale and fluffy. Next add the eggs one at a time and beat.

3. Mix in the flour and the milk, divide equally between the cases and bake in the oven for 15- 20 minutes.

4. Make the topping in the meantime: just mix everything together and set aside. Once the cupcakes are done leave to cool on a wire rack.

5. Spread the topping over each cupcake and press 3 jelly slices on top 🙂

These are perfect for kids parties and any other occasion!

Lemon and Poppyseed Cupcakes

I feel like I am forever making sweet things so I’ve decided to try something a little different….. lemon and poppyseed cupcakes!! I actually saw this recipe ages ago but only just decided to bake them after wanting to try something new. The recipe was posted on Twitter by Lorraine Pascal and it was super simple and different to what I usually do so I thought why not.

Ingredients
175g self raising flour
1/2 tsp bicarbonate soda
110g castor sugar
Zest and juice of a lemon
70g melted butter
175g milk (I used almond milk)
25g poppyseeds

Method
1. Firstly prepare your cupcake tray with 12 cases.

2. You can literally just put all the ingredients into a bowl and mix vigorously until well combined. It may be easier to use a handheld whisk if you have one but both methods work great.

3. I then used a ladle to equally fill each case with the mixture and put into the oven for 20 minutes.

4. Enjoy whilst slightly warm.

Okay, so my end thoughts on these cupcakes are undecided, I am so used to eating and enjoying sweet baked foods that it will take some time for me to appreciate the ingredients used such as poppyseeds and lemons however I know that they are much healthier because they contain less sugar and the poppyseeds are full of nutrients.

I definitely want to start looking at different recipes and see what alternatives I can use to have the same great taste with added health benefits.

Pretty Pink Cupcakes

This recipe is very simple to make, I think it’s a common type for most plain cupcakes then you can decorate them as you want. These look so sweet and I think it’s because the pink colour is so bright but they do taste delicious.

INGREDIENTS
125g butter
125g soft light brown sugar
2 eggs
150g self raising flour
3 tbsp milk
1 tsp vanilla extract

METHOD
– Preheat the oven to gas mark 5, 

– prepare a cupcake baking tray with 12 cupcake cases

– next beat together the butter and sugar until pale and fluffy

– then beat in the eggs one at a time and mix in the flour and the milk

– equally spoon into each cupcake case and bake for 17-20 minutes until slightly golden and springy to the touch

– leave to cool down completely before decorating, I literally just made the icing with icing sugar and water then added some red food colouring and sprinkled with mini choco balls

Chocolate Cupcakes with Chocolate Swirls

These cupcakes are super simple to make and take minutes to bake. I haven’t had a lot of time to bake recently as I’ve been so busy with work, starting uni and other stuff. I also didn’t really have much cake decorating produce so I put swirly patterns over the top.

They are just standard chocolate cupcakes so I didn’t bother with a recipe, they are a great teatime treat enjoyed with a hot drink.

Mini Chocolate Magic Stars Cupcakes

These mini cupcakes are so delicious and are perfect for any occasion or as a treat enjoyed by everyone.

INGREDIENTS
125g butter, softened
125g castor sugar
2 eggs
150g self raising flour
2 heaped tbsp cocoa powder
4 tbsp freshly squeezed orange juice

Basic Buttercream
75g butter softened
1 tbsp milk
1 tsp vanilla extract
225g icing sugar

METHOD
1. Preheat the oven to gas mark 4/ 180°c. Prepare the mini paper cases into the cupcake tin. Start by beating the butter and sugar together then stir in the eggs one by one.

2. Sift the flour and cocoa powder and combine with the rest of the mixture, then stir in the orange juice. Evenly distribute between the cases and bake for 15 minutes. Once done leave to cool completely.

Fresh out the oven

3. Now beat together all the ingredients for the buttercream, once the cupcakes are cooled add a dollop of buttercream to each top and spread using a palette knife. I added a few magic stars but you can decorate yours with anything 🙂
