VEGAN Chocolate Cakeย 

Hey everyone, it’s been a while since I’ve posted some baking but here is the best vegan cake recipe I’ve ever tasted. At university we’ve been working on recipes suitable for different dietary groups so here goes… 

Makes 9

Dry Ingredients 

2 1/2 cups flour 
2 1/2 cups caster sugar
1 cup cocoa powder
1 tsp baking powder
1/2 tsp bicarbonate soda
1 tsp salt

Wet Ingredients

2 2/3 non dairy milk
2/3 cups oil
2 tbsp vinegar
1 tsp vanilla extract

1. Preheat the oven to 180ยฐc and prepare mini cake loafs for baking.

2. Put all of the dry ingredients into a large bowl and mix well.

3. Then whisk together the wet ingredients in a hug and slowly pour into the bowl whisking constantly.

4. Whisk until you get a smooth runny mixture, evenly pour into the mini loaf cases about 3/4 and bake in the oven for 25 minutes until risen and fully cooked.

5. I like to use a cocktail stick to check if the cake is fully cooked right through. Leave to cool down completely and enjoy ๐Ÿ˜Š๐Ÿ˜Š

Chocolate Surprise Cupcakes

Hey guys, another great chocolate post for you all!! These cupcakes are so cool because you’ve got the candied chocolate on top and in the middle with a super delicious frosting ๐Ÿ˜‹ perfect for birthday celebrations ๐ŸŽŠ๐ŸŽŠ

Use a small knife to cut a hole in the top and add the candied chocolate

Marshmallow Chocolate Browniesย 

Hi everyone ๐Ÿ˜€ so I haven’t made brownies for a long while and decided it was time!! 

Makes 25 small squares

100g dark chocolate
1 heaped tbsp cocoa powder
125g butter
50g soft brown sugar
100g caster sugar
1 yep vanilla extract
2 eggs
125g self raising flour
Pinch of salt


1. Preheat the oven to gas mark 3 and line a shallow baking tin with parchment paper.

2. In a heat proof bowl melt the chocolate, butter and 2 tbsp water over a pan of simmering water.

3. Remove the bowl from the pan of water and leave to cool down slightly before adding the sugar, vanilla extract and eggs. Then fold in the flour and salt and pour into the baking tin.

4. Bake in the oven for 25-30 minutes until risen but the centre should still be a little gooey. Once baked leave to cool down and cut into squares.

I even added some sprinkles on top for extra decoration.

Easy Nutella Cookies

This is the perfect recipe for when you need a quick sweet treat. Posting a little later than usual today as I’ve been busy working. 

Makes 20


70g plain flour
1 egg
230g Nutella
*you could add 50g of chocolate chips, nuts or raisins for extra flavour*


– preheat the oven to gas mark 4 and line 2 trays with parchment paper.

– mix everything together in a small bowl.

– use a teaspoon and place 10 balls on each tray.

– bake in the oven for 15 minutes.

I loved baking these because it was so quick and they tasted amazing ๐Ÿ˜‹

Chocolate Muffinsย 

I’ve been a little chocolate obsessed lately ๐Ÿ˜‹ and I’m sure everybody loves chocolate muffins right? 

Makes: 7


125g plain flour 
25g cocoa powder
1 tsp baking powder
60g caster sugar
1 egg
2 tbsp oil
100ml milk

I’ve also used a chocolate frosting.


1. Set the oven to gas mark 4 and place 7 muffin cases on a tray.

2. Place all the dry ingredients together in a small bowl and the liquid ingredients into a hug, use a fork to mix the liquids.

3. Pour the liquid mixture into the bowl and stir with a wooden spoon of until the mixture is smooth.

4. Evenly distribute into the muffin cases and bake in the oven for 25-30 minutes, use a mini cocktail stick to check if they are baked right through.

5. Once baked leave to cool down fully before adding the frosting!!

Double Chocolate Traybake ๐Ÿซย 

Hi guys, this week I’ve used a ready prepared cake mix which is definitely unusual for me however I wanted to do/try something different. It also saves so much time and effort especially if you don’t have a lot of free time. It’s really quick and easy anyone can do it regardless of your skills.
Makes: 12

Cake mix
2 eggs
75ml cold water
Chocolate frosting
55g butter at room temperature
2 tsp milk


1. Too the cake mix into a bowl and add the eggs and water, stirring until smooth. Pour into a small 6 inch baking tin and bake in the oven for 15-20 minutes on gas mark 4.

2. Once baked take out and leave to completely cool down. Tip the frosting into a bowl adding the butter and milk stirring until creamy.

3. Layer the frosting over the cake and sprinkle with white chocolate stars ๐ŸŒŸ ๐ŸŒŸ

See really easy!! And it’s the perfect kids birthday cake ๐ŸŽŠ

There are many different varieties of the double chocolate traybake but here’s what I used.

Oreo Cupcakes

Hey everyone, so I had a box of chocolate Oreos in the cupboard for ages because wasn’t quite sure what I wanted to bake with them. Then I just decided on Oreo Cupcakes!! The recipe is super simple and the buttetcream is actually to die for, like it tastes so so good and isn’t too sweet. These cupcakes would definitely go down well for the festive seasonal parties.

Makes 12


200g plain flour
40g cocoa powder
250g caster sugar
2 tsp baking powder
Pinch of salt
80g butter, at room temperature
240ml milk
ยฝ tsp vanilla extract
6 Oreo biscuits

4 Oreo biscuits, smashed up
100g butter at room temperature
250g icing sugar


1. Preheat the oven to gas mark 4 and place 12 cupcake cases into the cupcake tray holes.

2. In a large bowl, add the flour, sugar, cocoa powder, baking powder and salt then mix well.

3. Next melt the butter and add to a jug with the milk, eggs and vanilla extract, whisk well and slowly pour into the flour mix stirring well until it turns to a smooth consistency.

4. Evenly distribute the cake mixture between the cupcake cases about 2/3’s full. Bake in the oven for 25 mins and leave to cool down fully.

5. Whilst the cupcakes are baking make the buttercream by mixing together all the ingredients and leave in a piping bag.

6. Once baked and completely cool pipe the buttercream onto the cupcakes equally then twist the Oreo biscuits in half and place each half on top of a cupcake.

All done, now you can relax and enjoy the cupcakes!!

Chocolate Marshmallow Cookies

So I’m back from my mini break away from blogging with this super sweet recipe perfect for any sweet tooth out there. It contains marshmallows too which is cool as I’ve never baked with marshmallows before, I get why most people don’t often bake marshmallows because they melt into almost nothing leaving holes in your biscuits :O I still managed to take some pictures though.โ€‹

Makes 15


100g butter
150g soft brown sugar
1 tsp vanilla extract
1 egg
ยฝ tsp baking powder
150g self raising flour
50g marshmallows
2 tbsp milk


1. Preheat the oven to gas mark 4 and line two baking trays with parchment paper.

2. Mix together the butter and sugar until light and fluffy. Then add the egg and vanilla extract and combine well.

3. In a separate bowl sift in the cocoa powder, baking powder and flour. Slowly fold into the butter mixture adding the marshmallows and milk.

4. Use a tablespoon to place equal portions of the mixture onto the baking trays, next put in the oven and bake for 15 minutes.

5. These cookies taste best when they’ve been left to cool down fully approx. 15 mins

My Rocky Road

Hi everyone, so I made this Rocky Road using the soreen cake instead of digestive biscuits and it still turned out really good. This recipe is for those who have a sweet tooth because it is fairly sweet however if you cut them small the Rocky Road is very enjoyable in smaller quantities!!


250g milk chocolate
Soreen cake
Chopped nuts


It’s all really simple and you just add the amount of each ingredient you want.

  • Set a heat proof bowl over a pan of boiling water and add the chocolate to melt, in the meantime chop the soreen cake into small chunks and add to the bowl.
  • Next add the chopped nuts and raisins then mix in and take off the heat.
  • Finally add the marshmallows, give it a final mix and leave to set in the fridge.

The great thing about this recipe is that it is super quick and you don’t need the oven!!

Chocolate Coffee Loaf

I haven’t made a cake for a while so here goes my recipe for a chocolate coffee loaf, it’s definitely something different because I don’t usually bake with coffee nor do I drink it. The flavour of coffee in this loaf is just right however if you like coffee you can add a little more.โ€‹

150g Caster sugar
150g Butter
3 eggs
150g Plain flour
1ยฝ tsp baking soda
1 heaped tbsp cocoa powder
1 tbsp hot water
1 tbsp instant coffee

1. Line a load tin with parchment paper and preheat the oven to gas mark 4, cream the butter and sugar together in a large bowl until pale.

2. Whisk in the eggs one at a time adding a tbsp of flour in between (this stops the mixture from splitting).

3. Then add the rest of the flour along with the baking powder and cocoa powder. Dissolve the coffee in the boiling water then add to the cake mixture.

4. Stir the mixture well then pour into the cake tin and bake for 35-45 minutes until cooked right through.

5. Lastly I just grated some dark chocolate on top and sprinkled on some icing sugar.

Honestly this cake tasted so good!!
