Dark Jamaican Ginger Cake

Hey guys, Jamaican ginger cake is one of my favourite cakes aside from chocolate 😋 I found this recipe online and I just had to bake it and share it with you guys. There’s a lot of sugar in the recipe from the soft dark sugar, golden syrup and treacle but it doesn’t taste overly sweet. It was also really runny so I did wonder how the gingerbread would turn out and here is the result…

Makes: 1 loaf tin

Ingredients

175g plain flour, sifted
1 tbsp ground ginger
1 tsp ground cinnamon
1/2 tsp grated nutmeg
1/2 tsp bicarbonate soda
2 tbsp milk or milk alternative
75g black treacle
75g golden syrup
75g dark brown soft sugar
75g butter
1 egg

Method

1. Preheat the oven to gas mark 4 and line a loaf tin with parchment paper.

2. In a large bowl mix, sift the flour and spices then separately mix the bicarbonate soda with milk and set aside.

3. Then, into a saucepan measure the treacle, syrup, sugar and butter with 75ml of water. Heat gently until everything is thoroughly melted.

4. Next add the syrup mixture to the flour and stir vigorously with a wooden spoon until smooth. Beat in the egg and add the bicarbonate soda and milk.

5. Mix well and pour into the prepared baking tin, place in the oven and bake for 1 hour. Remove from the oven and leave to cool for 10 minutes before taking out.

Red Velvet Cupcakes with Cream Cheese

Hi guys, the last time I tried to make a red velvet cake I was not as successful but these cupcakes are fantastic. When ever decorating with a sweet top I try to make sure the actual cake mixture is not too sweet so when you bite into the cupcake there’s a subtle sweetness from the cream cheese.

I even used matching red cupcake cases

On top I’ve added some sugar coloured crystals which looked great in the pictures.

VEGAN Chocolate Cake

Hey everyone, it’s been a while since I’ve posted some baking but here is the best vegan cake recipe I’ve ever tasted. At university we’ve been working on recipes suitable for different dietary groups so here goes…

2 1/2 cups flour
2 1/2 cups caster sugar
1 cup cocoa powder
1 tsp baking powder
1/2 tsp bicarbonate soda
1 tsp salt

Wet Ingredients

2 2/3 non dairy milk
2/3 cups oil
2 tbsp vinegar
1 tsp vanilla extract

Method
1. Preheat the oven to 180°c and prepare mini cake loafs for baking.

2. Put all of the dry ingredients into a large bowl and mix well.

3. Then whisk together the wet ingredients in a hug and slowly pour into the bowl whisking constantly.

4. Whisk until you get a smooth runny mixture, evenly pour into the mini loaf cases about 3/4 and bake in the oven for 25 minutes until risen and fully cooked.

5. I like to use a cocktail stick to check if the cake is fully cooked right through. Leave to cool down completely and enjoy 😊😊

Double Chocolate Traybake 🍫

Hi guys, this week I’ve used a ready prepared cake mix which is definitely unusual for me however I wanted to do/try something different. It also saves so much time and effort especially if you don’t have a lot of free time. It’s really quick and easy anyone can do it regardless of your skills.
Makes: 12

Ingredients
Cake mix
2 eggs
75ml cold water
Chocolate frosting
55g butter at room temperature
2 tsp milk

Method

1. Too the cake mix into a bowl and add the eggs and water, stirring until smooth. Pour into a small 6 inch baking tin and bake in the oven for 15-20 minutes on gas mark 4.

2. Once baked take out and leave to completely cool down. Tip the frosting into a bowl adding the butter and milk stirring until creamy.

3. Layer the frosting over the cake and sprinkle with white chocolate stars 🌟 🌟

See really easy!! And it’s the perfect kids birthday cake 🎊

There are many different varieties of the double chocolate traybake but here’s what I used.

Carrot Cake

Hi guys 😀 so this carrot cake I made was for my Uncles birthday, I usually bake things for him when I have free time and I think everyone loves a classic carrot cake.

Makes a large oven tray.

Ingredients
450ml vegetable oil
400g plain flour
2 tap bicarbonate soda
100g caster sugar
350g soft brown sugar
5 eggs
½ tsp salt
2 tap cinnamon
500g grated carrots
100g chopped nuts
50g raisins

Method

1. Preheat the oven to gas mark 4 and line a oven tray with parchment paper.

2. Mix all of the ingredients together in a large bowl except from the carrots, walnuts and 1 tbsp of flour, mix until smooth. Add the flour to the raisins (to keep them from sinking) then add both the raisins and carrot to the cake mixture.

3. Carefully spoon the mixture into a cake tin and bake for 1 hour and 15 mins.  Once baked remove from the oven and leave to cool down completely, this cake will taste so delicious 😋 it is really nice and moist and would go great with custard if you like it!!

Strawberry Apple Cake

Hey everyone 🙂 so this is quite weird combination I think but experimenting with different fruits is fun I think 😉 I like both strawberries and apples but never tried them together. I decided to make this because I had some leftover swiss role cake from my previous baking fail see it here: https://ablovesfood.wordpress.com/2016/10/25/when-i-tried-to-make-a-swiss-role-fail/?preview=true and I didn’t want to waste it. Also the house is always filled with apples!!

Ingredients
Leftover baked sponge cake
3 apples
100g butter

Method
1. Preheat the oven to gas mark and take out a rectangle glass oven dish.

2. Crumble up your already baked cake and place in a mixing bowl.

3. Next wash, peel and quarter the apples then grate each piece adding to the bowl.

4. Melt the butter, I like to use the microwave for convenience sometimes. Use a little more or less depending on how much cake you have. Pour the melted butter into the bowl and mix well until everything is combined.

5. Tip into the oven dish and bake for 25 minutes. When you take it out it will be quite spongy and soft. Serve warm with fresh custard 🙂

So this was something really different and doesn’t look the most appealing but it was okay, watch out for my apple cake recipe coming soon.

Chocolate Coffee Loaf

I haven’t made a cake for a while so here goes my recipe for a chocolate coffee loaf, it’s definitely something different because I don’t usually bake with coffee nor do I drink it. The flavour of coffee in this loaf is just right however if you like coffee you can add a little more.

Ingredients
150g Caster sugar
150g Butter
3 eggs
150g Plain flour
1½ tsp baking soda
1 heaped tbsp cocoa powder
1 tbsp hot water
1 tbsp instant coffee

Method
1. Line a load tin with parchment paper and preheat the oven to gas mark 4, cream the butter and sugar together in a large bowl until pale.

2. Whisk in the eggs one at a time adding a tbsp of flour in between (this stops the mixture from splitting).

3. Then add the rest of the flour along with the baking powder and cocoa powder. Dissolve the coffee in the boiling water then add to the cake mixture.

4. Stir the mixture well then pour into the cake tin and bake for 35-45 minutes until cooked right through.

5. Lastly I just grated some dark chocolate on top and sprinkled on some icing sugar.

Honestly this cake tasted so good!!

When I Tried to Make a Swiss Role #Fail

So I thought it would be really easy but I was surprised with my turnout. I’m not sure if it was not whisked enough or may be too much and the mixture was kind of stiff, then after I took it from the oven the cake wasn’t moist or soft enough to role at ease without it cracking along the sides.

Baking is so much fun and it is all about trial and error so if it doesn’t turn out amazing the first time try again until you get it right or are at least proud of what you have made/done. This kind of applies to any situation in life basically never give up and keep trying.

I will definitely try to bake a swiss roll again but I think I’ll use a different recipe 🙂 Happy Baking!!

I used the recipe from http://www.deliciousmagazine.co.uk/recipes/swiss-roll/

This #fail won’t make it to my Instagram: angelicaa_b ❤
