Orange Butter Biscuits 🍊 

I loved the lemon butter biscuits so much that I had to try them flavoured with orange zest! You could also try other fruits too like grapefruit, banana or strawberry by adding 30g – 40g of fruit to the mixture. With this recipe I added some food colouring to add a more orangey tone to the biscuits πŸ˜€

Makes 30

Ingredients 
120g unsalted butter
100g caster sugar
1 large egg
1 large orange 
200g plain flour
1/3 baking powder

Method

1. Beat the butter and sugar together until creamy, then add the egg and continue beating until its light and fluffy.

2. Finely zest the orange into the bowl, then add the plain flour and baking powder. Give it a big mix.

3. It will look a bit like a cake mixture now, use a heaped teaspoon to put the biscuits onto the baking tray and finally bake in the oven for 20 minutes until brown and golden.

Easy Nutella Cookies

This is the perfect recipe for when you need a quick sweet treat. Posting a little later than usual today as I’ve been busy working. 

Makes 20

Ingredients 

70g plain flour
1 egg
230g Nutella
*you could add 50g of chocolate chips, nuts or raisins for extra flavour*

Method

– preheat the oven to gas mark 4 and line 2 trays with parchment paper.

– mix everything together in a small bowl.

– use a teaspoon and place 10 balls on each tray.

– bake in the oven for 15 minutes.

I loved baking these because it was so quick and they tasted amazing πŸ˜‹

Oreo Cupcakes

Hey everyone, so I had a box of chocolate Oreos in the cupboard for ages because wasn’t quite sure what I wanted to bake with them. Then I just decided on Oreo Cupcakes!! The recipe is super simple and the buttetcream is actually to die for, like it tastes so so good and isn’t too sweet. These cupcakes would definitely go down well for the festive seasonal parties.

Makes 12

Ingredients
200g plain flour
40g cocoa powder
250g caster sugar
2 tsp baking powder
Pinch of salt
80g butter, at room temperature
240ml milk
Β½ tsp vanilla extract
6 Oreo biscuits

Buttercream
4 Oreo biscuits, smashed up
100g butter at room temperature
250g icing sugar

Method

1. Preheat the oven to gas mark 4 and place 12 cupcake cases into the cupcake tray holes.

2. In a large bowl, add the flour, sugar, cocoa powder, baking powder and salt then mix well.

3. Next melt the butter and add to a jug with the milk, eggs and vanilla extract, whisk well and slowly pour into the flour mix stirring well until it turns to a smooth consistency.

4. Evenly distribute the cake mixture between the cupcake cases about 2/3’s full. Bake in the oven for 25 mins and leave to cool down fully.

5. Whilst the cupcakes are baking make the buttercream by mixing together all the ingredients and leave in a piping bag.

6. Once baked and completely cool pipe the buttercream onto the cupcakes equally then twist the Oreo biscuits in half and place each half on top of a cupcake.

All done, now you can relax and enjoy the cupcakes!!

Sugar Cookies

I get regular emails from Emerald Street and I’ve noticed recently they sometimes have a recipe in them. Anyway this week I made The Log Ladies Sugar Cookies sounds amazing right?? Basically they are vanilla flavoured cookies inspired by the tv show Twin Peaks. They are described as the perfect winter snack and I would definitely agree with that πŸ™‚

Makes 18

Ingredients
250g plain flour
150g butter, cubed at room temp
125g caster sugar
1 tsp vanilla extract
Pinch of salt

Method

1. Set the oven to gas mark 4 and line two trays with parchment paper.

2. Place the flour in a large bowl and add the butter, rub together with your finger tips until it resembles breadcrumbs.
3. Next still using your hands work in the sugar, vanilla extract and salt. Slowly bring the mixture together until it forms a dough.

4. At this stage the ‘dough’ may seem quite dry or not together but you just have to keep kneading the ingredients together, once your hands warm up the butter it will melt better into the flour which will release the gluten and help form the dough.

5. Now you can roll out the dough onto a floured surface and cut the cookies using a large scalloped edge cutter.

6. Carefully place onto the baking trays and bake for 15 minutes. Leave to cool down fully on a wire rack.

Chocolate Marshmallow Cookies

So I’m back from my mini break away from blogging with this super sweet recipe perfect for any sweet tooth out there. It contains marshmallows too which is cool as I’ve never baked with marshmallows before, I get why most people don’t often bake marshmallows because they melt into almost nothing leaving holes in your biscuits :O I still managed to take some pictures though.​

Makes 15

Ingredients

100g butter
150g soft brown sugar
1 tsp vanilla extract
1 egg
Β½ tsp baking powder
150g self raising flour
50g marshmallows
2 tbsp milk

Method

1. Preheat the oven to gas mark 4 and line two baking trays with parchment paper.

2. Mix together the butter and sugar until light and fluffy. Then add the egg and vanilla extract and combine well.

3. In a separate bowl sift in the cocoa powder, baking powder and flour. Slowly fold into the butter mixture adding the marshmallows and milk.

4. Use a tablespoon to place equal portions of the mixture onto the baking trays, next put in the oven and bake for 15 minutes.

5. These cookies taste best when they’ve been left to cool down fully approx. 15 mins

Daim Cookies-Daimkakor

Hey so this recipe I actually found in the newspaper and was I pretty excited to bake these cookies because I hadn’t tried the Daim Chocolate Bar before. They were different but not my first choice because I didn’t really like the  crunchy caramel centre (a bit too sweet for me). A little background on the chocolate bar is that they are very popular in Sweden, originating in Scandinavia during the 1950’s and were bought by Kraft foods and renamed to Dime. Now it’s back to Daim!!

Ingredients
150g butter
300g plain flour
Β½ tsp bicarbonate soda
Β½ vanilla extract
ΒΌ tsp sea salt
150g brown sugar
100g caster sugar
1 egg
1 egg yolk
2 tbsp milk
5 Daim bars (roughly chopped)

Method
1. Melt the butter then leave to cool down. Combine the flour, bicarbonate soda, vanilla extract and salt in a bowl and set aside.

2. Combine both sugars with the melted butter and stir until there are no lumps. Add the egg, egg yolk and milk combining well.

3. Add the flour a little at a time and mix really well, next mix in the chopped Daim pieces and wrap in cling film and leave in the fridge for 2 hours.

4. After a couple of hours take out from the fridge and the preheat the oven to gas mark 5 and line 2 trays with parchment paper. 

5. Split the dough in half and form each piece into 12 balls and place on the baking trays. Flatten down the balls into biscuits then bake in the oven for 10 minutes until just golden.

Once baked remove from the oven and transfer to a wire rack to cool down. They will still be slightly soft when they are warm and nice and chewy on the inside πŸ™‚

Peanut Butter Cookies

These cookies are very delicious and simple to make, I fancied something salty for a snack and these cookies were perfect.

Makes 24

Ingredients
175g plain flour
Β½ tsp baking powder
Β½ tsp salt
225g smooth peanut butter
115g butter
1 tsp vanilla extract
100g brown sugar
100g caster sugar
2 eggs

Method
1. Sift the flour and baking powder into a large bowl then add the salt. 

2. In a separate bowl bear together the peanut butter, butter and vanilla extract until smooth. Next beat in both sugars adding the eggs one by one. 

3. Stir the butter mixture into the flour mix in two batches, stirring until it forms a really smooth dough. Wrap the dough in cling film and leave to rest in the fridge for 1 and Β½ hours.

4. In the meantime preheat the oven to gas mark 4  and take out 2 trays.

5. Take the dough from out the fridge, spoon out small balls and flatten into circle shapes placing on the baking trays. Press a fork over the top and bake in the oven for 15 minutes.

Nutella Cookies

A slight fib, I actually used Cadbury’s chocolate spread but they’re pretty much the same thing. I got this fantastic recipe from a book I read a few years ago called ‘Meet Me at the Cupcake Cafe’ by Jenny Colgan it’s a great inspiring and motivating book that I would recommend if you love baking and maybe like the idea of starting your own business one day.

Makes 12

Ingredients
225g self raising flour
2 tsp baking powder
100g butter
100g caster sugar
Β½ tsp bicarbonate soda (dissolved in 1 tsp of hot water)
2 tbsp golden syrup
6 tsp nutella

Method

1. Set the oven to gas mark 5 and line a baking tray with parchment paper.

2. Sift the flour and baking powder into a large bowl. Rub in the butter, sugar, bicarb and Nutella to form a dough.

3. Next roll into small balls and place on the tray, pressing down in the centre with your thumb.

4. Bake for 10-15 minutes, they will still be soft but take them out to cool down.

These cookies are really nice, quite sweet because of the sugar and chocolate but also chewy. The Nutella Cookies are a great after dinner snack for children!!

Jammie Stars

I’ve did a similar recipe previously but the biscuits were peanut butter flavoured, whereas these biscuits are a typical biscuit recipe. Since we don’t need the egg whites you can use it for a nose mask adding a little lemon juice and apply using tissue πŸ˜€

Makes 15

Ingredients
225g butter
140g caster sugar
1 egg yolk
1 tsp vanilla extract
280g plain flour
5 tbsp strawberry jam

Method
1. Put the butter and sugar into a bowl and mix well, beat in the egg yolk and vanilla extract. Next sift in the flour and stir until the mixture forms a dough. Then wrap in cling film and leave in the forms fridge for 1 hour.

2. After the hour, set the oven to gas mark 5 and line 2 trays with parchment paper. Unwrap the dough and roll out to 5mm thick. Use cutters to cut out the biscuits and a smaller cutter for the star shape. Make equal amounts of the top and bottom of the Jammie Stars.

3. Bake them in the oven for 10 minutes and leave to cool down. Once cool spread with jam on the bottom biscuit and place the top biscuit on top.


You could use any flavoured jam of your choice or use chocolate spread!! They look so magical :O
