Dark Jamaican Ginger Cake

Hey guys, Jamaican ginger cake is one of my favourite cakes aside from chocolate ๐Ÿ˜‹ I found this recipe online and I just had to bake it and share it with you guys. There’s a lot of sugar in the recipe from the soft dark sugar, golden syrup and treacle but it doesn’t taste overly sweet. It was also really runny so I did wonder how the gingerbread would turn out and here is the result…

Makes: 1 loaf tin


175g plain flour, sifted
1 tbsp ground ginger
1 tsp ground cinnamon
1/2 tsp grated nutmeg
1/2 tsp bicarbonate soda
2 tbsp milk or milk alternative
75g black treacle
75g golden syrup
75g dark brown soft sugar
75g butter
1 egg


1. Preheat the oven to gas mark 4 and line a loaf tin with parchment paper.

2. In a large bowl mix, sift the flour and spices then separately mix the bicarbonate soda with milk and set aside.

3. Then, into a saucepan measure the treacle, syrup, sugar and butter with 75ml of water. Heat gently until everything is thoroughly melted. 

4. Next add the syrup mixture to the flour and stir vigorously with a wooden spoon until smooth. Beat in the egg and add the bicarbonate soda and milk. 

5. Mix well and pour into the prepared baking tin, place in the oven and bake for 1 hour. Remove from the oven and leave to cool for 10 minutes before taking out.

Red Velvet Cupcakes with Cream Cheese

Hi guys, the last time I tried to make a red velvet cake I was not as successful but these cupcakes are fantastic. When ever decorating with a sweet top I try to make sure the actual cake mixture is not too sweet so when you bite into the cupcake there’s a subtle sweetness from the cream cheese. 

I even used matching red cupcake cases

On top I’ve added some sugar coloured crystals which looked great in the pictures.

Gluten Free Avocado Browniesย 

Hey everyone ๐Ÿ˜€ hope your week has been good!! I’ve been back in the kitchen baking again trying new things. This is actually my first time baking with avocado and this recipe turned out great but they were really creamy in texture from the avocados, maybe next time I’ll add more flour. 

Makes 20 small squares 


100g dark chocolate
2 eggs, at room temperature
60g caster sugar
20g cocoa powder
25g grounds almonds/ walnuts
1 tsp vanilla extract
1 avocado, mashed

1. Preheat the oven to 180ยฐc and line a small baking tray with parchment paper.

2. Break the chocolate into blocks and put into a heat proof bowl placed above simmering water (bain-marie).

3. In a separate bowl whisking together the sugar and eggs until light and fluffy, you can also use an electric mixer here.

4. Mix the cocoa, walnuts, vanilla extract and avocado into the melted chocolate and stir well. Pour this into the eggs mixture whisking until a smooth consistency.

5. Carefully pour the mixture into the prepared tray and bake in the oven for 20 minutes.

6. Leave to cool down completely before cutting into even squares.

VEGAN Chocolate Cakeย 

Hey everyone, it’s been a while since I’ve posted some baking but here is the best vegan cake recipe I’ve ever tasted. At university we’ve been working on recipes suitable for different dietary groups so here goes… 

Makes 9

Dry Ingredients 

2 1/2 cups flour 
2 1/2 cups caster sugar
1 cup cocoa powder
1 tsp baking powder
1/2 tsp bicarbonate soda
1 tsp salt

Wet Ingredients

2 2/3 non dairy milk
2/3 cups oil
2 tbsp vinegar
1 tsp vanilla extract

1. Preheat the oven to 180ยฐc and prepare mini cake loafs for baking.

2. Put all of the dry ingredients into a large bowl and mix well.

3. Then whisk together the wet ingredients in a hug and slowly pour into the bowl whisking constantly.

4. Whisk until you get a smooth runny mixture, evenly pour into the mini loaf cases about 3/4 and bake in the oven for 25 minutes until risen and fully cooked.

5. I like to use a cocktail stick to check if the cake is fully cooked right through. Leave to cool down completely and enjoy ๐Ÿ˜Š๐Ÿ˜Š

Chocolate Surprise Cupcakes

Hey guys, another great chocolate post for you all!! These cupcakes are so cool because you’ve got the candied chocolate on top and in the middle with a super delicious frosting ๐Ÿ˜‹ perfect for birthday celebrations ๐ŸŽŠ๐ŸŽŠ

Use a small knife to cut a hole in the top and add the candied chocolate

Marshmallow Chocolate Browniesย 

Hi everyone ๐Ÿ˜€ so I haven’t made brownies for a long while and decided it was time!! 

Makes 25 small squares

100g dark chocolate
1 heaped tbsp cocoa powder
125g butter
50g soft brown sugar
100g caster sugar
1 yep vanilla extract
2 eggs
125g self raising flour
Pinch of salt


1. Preheat the oven to gas mark 3 and line a shallow baking tin with parchment paper.

2. In a heat proof bowl melt the chocolate, butter and 2 tbsp water over a pan of simmering water.

3. Remove the bowl from the pan of water and leave to cool down slightly before adding the sugar, vanilla extract and eggs. Then fold in the flour and salt and pour into the baking tin.

4. Bake in the oven for 25-30 minutes until risen but the centre should still be a little gooey. Once baked leave to cool down and cut into squares.

I even added some sprinkles on top for extra decoration.

Orange Butter Biscuits ๐ŸŠย 

I loved the lemon butter biscuits so much that I had to try them flavoured with orange zest! You could also try other fruits too like grapefruit, banana or strawberry by adding 30g – 40g of fruit to the mixture. With this recipe I added some food colouring to add a more orangey tone to the biscuits ๐Ÿ˜€

Makes 30

120g unsalted butter
100g caster sugar
1 large egg
1 large orange 
200g plain flour
1/3 baking powder


1. Beat the butter and sugar together until creamy, then add the egg and continue beating until its light and fluffy.

2. Finely zest the orange into the bowl, then add the plain flour and baking powder. Give it a big mix.

3. It will look a bit like a cake mixture now, use a heaped teaspoon to put the biscuits onto the baking tray and finally bake in the oven for 20 minutes until brown and golden.

Easy Nutella Cookies

This is the perfect recipe for when you need a quick sweet treat. Posting a little later than usual today as I’ve been busy working. 

Makes 20


70g plain flour
1 egg
230g Nutella
*you could add 50g of chocolate chips, nuts or raisins for extra flavour*


– preheat the oven to gas mark 4 and line 2 trays with parchment paper.

– mix everything together in a small bowl.

– use a teaspoon and place 10 balls on each tray.

– bake in the oven for 15 minutes.

I loved baking these because it was so quick and they tasted amazing ๐Ÿ˜‹

Chocolate Muffinsย 

I’ve been a little chocolate obsessed lately ๐Ÿ˜‹ and I’m sure everybody loves chocolate muffins right? 

Makes: 7


125g plain flour 
25g cocoa powder
1 tsp baking powder
60g caster sugar
1 egg
2 tbsp oil
100ml milk

I’ve also used a chocolate frosting.


1. Set the oven to gas mark 4 and place 7 muffin cases on a tray.

2. Place all the dry ingredients together in a small bowl and the liquid ingredients into a hug, use a fork to mix the liquids.

3. Pour the liquid mixture into the bowl and stir with a wooden spoon of until the mixture is smooth.

4. Evenly distribute into the muffin cases and bake in the oven for 25-30 minutes, use a mini cocktail stick to check if they are baked right through.

5. Once baked leave to cool down fully before adding the frosting!!
