Hi everyone, so I made this Rocky Road using the soreen cake instead of digestive biscuits and it still turned out really good. This recipe is for those who have a sweet tooth because it is fairly sweet however if you cut them small the Rocky Road is very enjoyable in smaller quantities!!
250g milk chocolate
It’s all really simple and you just add the amount of each ingredient you want.
- Set a heat proof bowl over a pan of boiling water and add the chocolate to melt, in the meantime chop the soreen cake into small chunks and add to the bowl.
- Next add the chopped nuts and raisins then mix in and take off the heat.
- Finally add the marshmallows, give it a final mix and leave to set in the fridge.
The great thing about this recipe is that it is super quick and you don’t need the oven!!
