Chocolate Marshmallow Cookies

So I’m back from my mini break away from blogging with this super sweet recipe perfect for any sweet tooth out there. It contains marshmallows too which is cool as I’ve never baked with marshmallows before, I get why most people don’t often bake marshmallows because they melt into almost nothing leaving holes in your biscuits :O I still managed to take some pictures though.​

Makes 15

Ingredients

100g butter
150g soft brown sugar
1 tsp vanilla extract
1 egg
½ tsp baking powder
150g self raising flour
50g marshmallows
2 tbsp milk

Method

1. Preheat the oven to gas mark 4 and line two baking trays with parchment paper.

2. Mix together the butter and sugar until light and fluffy. Then add the egg and vanilla extract and combine well.

3. In a separate bowl sift in the cocoa powder, baking powder and flour. Slowly fold into the butter mixture adding the marshmallows and milk.

4. Use a tablespoon to place equal portions of the mixture onto the baking trays, next put in the oven and bake for 15 minutes.

5. These cookies taste best when they’ve been left to cool down fully approx. 15 mins

No posts for a week!!

Hey everyone, so recently things have been slightly hectic the past few week having my 2 neices and nephew live with us (I still live with my parents) I haven’t really had enough time to do baking or even general posts. Even though I mostly post twice each week I’m taking a break just for a week so I can get back on track, also I’m having issues with my phone and managed to loose a few of my draft posts 😦 which is so annoying however on the bright side at least I can put more effort into the other blog posts.

Being at university is definitely testing my academic abilities because these assignments are not as east as the first year, not to say they are difficult or hard but I just have to use more journals which aren’t that easy to read and understand. 

Regardless of the things going on there’s still great things to look forward to like my birthday and Christmas 🙂 🙂 I’m actually so excited for both!!! Literally just like a little kid.

Anyway I hope you’ve all had a fantastic week!

My Rocky Road

Hi everyone, so I made this Rocky Road using the soreen cake instead of digestive biscuits and it still turned out really good. This recipe is for those who have a sweet tooth because it is fairly sweet however if you cut them small the Rocky Road is very enjoyable in smaller quantities!!

Ingredients

250g milk chocolate
Soreen cake
Marshmallows
Chopped nuts
Raisins

Method

It’s all really simple and you just add the amount of each ingredient you want.

  • Set a heat proof bowl over a pan of boiling water and add the chocolate to melt, in the meantime chop the soreen cake into small chunks and add to the bowl.
  • Next add the chopped nuts and raisins then mix in and take off the heat.
  • Finally add the marshmallows, give it a final mix and leave to set in the fridge.

The great thing about this recipe is that it is super quick and you don’t need the oven!!

Be Yourself

I always feel the need to wear make up when I’m going out especially to work and university but some days I just feel like I should be make up free, not to copy Alicia Keys or anything but just to give my skin a break and let it breathe. I have been a fan of makeup ever since I was in secondary school wearing pink and black eyeshadow :/ sometimes separately and sometimes together. I can actually remember this girl in my class saying it looked really nice and I felt so cool. I also remember doing my liquid liner so so neat and I never had to touch my eyebrows. Now, though I still adore makeup I always still prefer the more natural look, who knows maybe one day I’ll be into contouring, high light and the rest. I’m all about the concealer, dark brows, mascara and liquid liner 😉

​I think I wear makeup to cover up specific areas like the dark circles around my eyes but also to enhance my other features like the shape of my eyes and eyebrows. Wearing makeup is great in my opinion but it definitely shouldn’t be a mask and you should always make sure that you are just as confident without it.

Lets not forget that we are all beautiful ❤

Strawberry Apple Cake

Hey everyone 🙂 so this is quite weird combination I think but experimenting with different fruits is fun I think 😉 I like both strawberries and apples but never tried them together. I decided to make this because I had some leftover swiss role cake from my previous baking fail see it here: https://ablovesfood.wordpress.com/2016/10/25/when-i-tried-to-make-a-swiss-role-fail/?preview=true and I didn’t want to waste it. Also the house is always filled with apples!!

Ingredients
Leftover baked sponge cake
3 apples
100g butter

Method
1. Preheat the oven to gas mark and take out a rectangle glass oven dish.

2. Crumble up your already baked cake and place in a mixing bowl.

3. Next wash, peel and quarter the apples then grate each piece adding to the bowl.

4. Melt the butter, I like to use the microwave for convenience sometimes. Use a little more or less depending on how much cake you have. Pour the melted butter into the bowl and mix well until everything is combined.

5. Tip into the oven dish and bake for 25 minutes. When you take it out it will be quite spongy and soft. Serve warm with fresh custard 🙂

So this was something really different and doesn’t look the most appealing but it was okay, watch out for my apple cake recipe coming soon.

Making New Friends

Since I started university last year I feel like I’ve met so many new people and made lots of new friends separately from my course group. Being an ambassador I get the chance to work with such a variety of people that I wouldn’t usually be around, but it is so great. I feel like I am advertising why you should become an ambassador but I’m not, I’ve just made some really good friends through working and they are the type if friendships which will last long after university is over. This is very relatable to anyone’s life if your looking to meet new people or make new friends outside of education and work, definitely join a local club or something similar and I guarantee you will meet some great people 🙂 ❤

Actually Enjoy Your Life!!

I keep finding myself guessing what the week ahead of me will be like rather than just enjoying my life and being present in each moment. It’s a shame because I often use a lot of my energy trying to predict how the future days will plan out rather than being content and present in life. Sometimes I worry about the unknown which is really pointless because ultimately I can’t control the future.

Basically I just feel we should all just relax more and take each day as they come rather than thinking too far ahead, just a bit of advise we can all utilise.

Chocolate Coffee Loaf

I haven’t made a cake for a while so here goes my recipe for a chocolate coffee loaf, it’s definitely something different because I don’t usually bake with coffee nor do I drink it. The flavour of coffee in this loaf is just right however if you like coffee you can add a little more.​


Ingredients
150g Caster sugar
150g Butter
3 eggs
150g Plain flour
1½ tsp baking soda
1 heaped tbsp cocoa powder
1 tbsp hot water
1 tbsp instant coffee

Method
1. Line a load tin with parchment paper and preheat the oven to gas mark 4, cream the butter and sugar together in a large bowl until pale.

2. Whisk in the eggs one at a time adding a tbsp of flour in between (this stops the mixture from splitting).

3. Then add the rest of the flour along with the baking powder and cocoa powder. Dissolve the coffee in the boiling water then add to the cake mixture.

4. Stir the mixture well then pour into the cake tin and bake for 35-45 minutes until cooked right through.

5. Lastly I just grated some dark chocolate on top and sprinkled on some icing sugar.

Honestly this cake tasted so good!!
