When I Tried to Make a Swiss Role #Fail

So I thought it would be really easy but I was surprised with my turnout. I’m not sure if it was not whisked enough or may be too much and the mixture was kind of stiff, then after I took it from the oven the cake wasn’t moist or soft enough to role at ease without it cracking along the sides. 

Baking is so much fun and it is all about trial and error so if it doesn’t turn out amazing the first time try again until you get it right or are at least proud of what you have made/done. This kind of applies to any situation in life basically never give up and keep trying. 


I will definitely try to bake a swiss roll again but I think I’ll use a different recipe πŸ™‚ Happy Baking!!

Real Cinnamon Buns- Kanelbullar

Here is another recipe I found in the newspaper, I really enjoyed baking these because they are so different to the usual things I bake. They remind me of the cinnamon swirls you can buy from Greggs. I actually halved the recipe and made 12 even though the original recipe makes 16. These buns tasted so amazing I can’t wait to make them again πŸ™‚

13g dried yeast
250ml milk, warmed
80g butter, melted
40g caster sugar
450g strong white flour
2 tsp ground cardamom
1 tsp salt
1 egg

80g butter
1 tsp plain flour
1 tbsp ground cinnamon
Β½ tsp vanilla sugar
80g caster sugar
Egg for brushing

3 tbsp golden syrup and sesame seeds

1. Paul the warm milk into a bowl Sprinkle in the yeast and whisk together Cover with cling film and leave in a warm place for about 15 minutes to become slightly bubbly. Pour into the bowl of a food mixer fitted with a dough hook.

2. Mix in the cooled, melted butter. Allow to combine for one minute, then add the sugar. In a separate bowl, weigh out 400g of the flour, add the cardamom and salt then mix. Start adding the flour and spices into the milk mixture bit by bit. Add half the Beaten egg. Keep kneading for 5 minutes you may need to add more flour at this stage but make sure the mixture is still a little bit sticky because you don’t want dry buns.

3. Cover the dough with cling film. Allow to rise for about 30 minutes or until it has doubled in size.

4. Place the dough out onto a lightly floured surface, knead through with your hands and work in more flour if needed. Next roll out the door to a 40 x 50 centimetre rectangle which is roughly 16 x 20 inches.

5. In a bowl, add the butter, flour, spices and sugars and mix together very well to make the filling. Use a spatula and spread the mixture evenly over the rolled out dough then fold the in half lengthways.

6. Using a knife for pizza cutter, cut 16 strips of dough. Take each strip and carefully twist it a few times then curl into a ‘knot’,  ensuring both ends are tucked underneath, so they don’t spring open during baking. Place the folded ‘knots’ on the prepared baking sheets, spaced well apart. Leave to rise under a kitchen cloth for 30 minutes.



 7. Preheat the oven to gas mark 6 / 200 degrees Celsius.
 8. Brush each bun lightly with the leftover beaten egg and place in the preheated oven to bake for around 10 to 15 minutes or until golden.

 9. Remove from oven, brush the warm buns lightly with the syrup and decorate with a sprinkle of nibbed pearl sugar. Immediately cover with a damp clean cloth for a few minutes to prevent them from going dry.

Mayonnaise on your hair??

It’s something I’m yet to try but I’ve heard so much great stuff about the benefits of mayonnaise for all hair types. It contains certain oils which help to moisturize and nourish each hair strand from within. Also considered to be great, especially for dry and damaged hair. The protein found in mayonnaise makes hair look fuller with a fantastic shine!!

       Mayonnaise Hair Treatment

– Use full fat mayo
– Dampen your hair using a spray bottle
– Part your hair into six sections
– Apply a generous amount to each section, starting from root to ends
– Give your head a good massage and leave for 20 minutes
– Afterwards rinse thoroughly with warm water (you can also shampoo afterwards but for a better effect leave to air dry and style πŸ™‚ ❀

Daim Cookies-Daimkakor

Hey so this recipe I actually found in the newspaper and was I pretty excited to bake these cookies because I hadn’t tried the Daim Chocolate Bar before. They were different but not my first choice because I didn’t really like the  crunchy caramel centre (a bit too sweet for me). A little background on the chocolate bar is that they are very popular in Sweden, originating in Scandinavia during the 1950’s and were bought by Kraft foods and renamed to Dime. Now it’s back to Daim!!



150g butter
300g plain flour
Β½ tsp bicarbonate soda
Β½ vanilla extract
ΒΌ tsp sea salt
150g brown sugar
100g caster sugar
1 egg
1 egg yolk
2 tbsp milk
5 Daim bars (roughly chopped)

1. Melt the butter then leave to cool down. Combine the flour, bicarbonate soda, vanilla extract and salt in a bowl and set aside.

2. Combine both sugars with the melted butter and stir until there are no lumps. Add the egg, egg yolk and milk combining well.

3. Add the flour a little at a time and mix really well, next mix in the chopped Daim pieces and wrap in cling film and leave in the fridge for 2 hours.

4. After a couple of hours take out from the fridge and the preheat the oven to gas mark 5 and line 2 trays with parchment paper. 

5. Split the dough in half and form each piece into 12 balls and place on the baking trays. Flatten down the balls into biscuits then bake in the oven for 10 minutes until just golden. 


Once baked remove from the oven and transfer to a wire rack to cool down. They will still be slightly soft when they are warm and nice and chewy on the inside πŸ™‚

A Little Bean Appreciation

Sometimes you’ve just got to take the time to really appreciate the beauty in nature. These broad beans are pink and purple they almost look magical, the colours are so pigmented and really stand out. The broad beans look so pretty and are very nutritious. Life can get really busy at times so always make the effort to just sit and appreciate the wonders that surround you, be it a broad bean, other foods, furniture, technology or the trees outside πŸ™‚ 



I’m not sure what dish these beans will be apart of, maybe a stew, soup or used in a salad!! They are locally grown too in an allotment which is always good…

One Pan Dish

My amazing ‘Sweet Vegetable Cottage Pie’ this is a great vegetarian dish, really simple for anyone to cook for dinner.  I actually topped this off with some mashed sweet potatoes but didn’t take a final picture but here’s what it looked like in the pan.

Olive oil
Β½ onion finely diced
2 handfuls of lentils
350ml vegetable stock
Canned tomatoes
150g pasta of your choice
Β½ broccoli cut into small trees
1 carrot grated

1. Heat the oil in the pan and gently fry the onions until slightly soft.

2. Place the potatoes into water to boil for 7 minutes then mash.

3. Once the onions are cooked add the lentils and veg stock, simmer for 10 minutes. Next add the canned tomatoes, pasta and broccoli cooking for a further 5 minutes.

4. Now pour the mixture into an oven dish and sprinkle with the carrot the cover evenly with the mashed sweet potatoes. Bake in the oven for 30 mins!! Yum.
