Peanut Butter Cookies

These cookies are very delicious and simple to make, I fancied something salty for a snack and these cookies were perfect.

Makes 24

Ingredients
175g plain flour
½ tsp baking powder
½ tsp salt
225g smooth peanut butter
115g butter
1 tsp vanilla extract
100g brown sugar
100g caster sugar
2 eggs

Method
1. Sift the flour and baking powder into a large bowl then add the salt. 

2. In a separate bowl bear together the peanut butter, butter and vanilla extract until smooth. Next beat in both sugars adding the eggs one by one. 

3. Stir the butter mixture into the flour mix in two batches, stirring until it forms a really smooth dough. Wrap the dough in cling film and leave to rest in the fridge for 1 and ½ hours.

4. In the meantime preheat the oven to gas mark 4  and take out 2 trays.

5. Take the dough from out the fridge, spoon out small balls and flatten into circle shapes placing on the baking trays. Press a fork over the top and bake in the oven for 15 minutes.

My Astrological Birthstone

All crystals have amazing healing properties we can be beneficial to our body health, not only that but they look very pretty too!! Each birthstone type is unique to the individual depending on which month they were born.

​My Birthstone: Sagittarius

Ancient Stones: amethyst, blue topaz, turquoise.

Traditional Stones: lapis lazuli and vesuvianite

Modern Stones: yellow sapphire, sagilite, ruby stone and idocrase.

There are so so so many more stones for each category but I’d be listing them all day 🙂 for best effects keep them close and wear as jewellery. You can even put the out when there’s a full moon. I’ve wanted a birthstone necklace for some time now but I’m still not sure where to buy it from. Never forget that people believe in different things, I happened to have a slight interest in healing crystals.

Organic Beauty Week 2016

I think this is pretty cool actually, a week dedicated to organic beauty 🙂 something that really interests me as I’m still mostly using organic products. It can be quite hard to know for certain if a product is truly organic however in the UK if it has the Soil Association symbol then you’ll know for certain that both the ingredients and methods used are of the correct standards. Of course you can always check the ingredients for those bad chemicals.

One of the main reasons I prefer organic or natural products is because of the negative effect it can have on my health. Our entire body is the largest organ we have and we really should look after it because everything we put on our skin is absorbed into our body.

Every now and then you’ll read an article about a serious reaction someone has had from using a beauty product which you would have thought to be safe, so it just seems like a better idea to use kinder products.

Mostly: the product claims to be organic but I’m not entirely sure.

Nutella Cookies

A slight fib, I actually used Cadbury’s chocolate spread but they’re pretty much the same thing. I got this fantastic recipe from a book I read a few years ago called ‘Meet Me at the Cupcake Cafe’ by Jenny Colgan it’s a great inspiring and motivating book that I would recommend if you love baking and maybe like the idea of starting your own business one day.

Makes 12

Ingredients
225g self raising flour
2 tsp baking powder
100g butter
100g caster sugar
½ tsp bicarbonate soda (dissolved in 1 tsp of hot water)
2 tbsp golden syrup
6 tsp nutella

Method

1. Set the oven to gas mark 5 and line a baking tray with parchment paper.

2. Sift the flour and baking powder into a large bowl. Rub in the butter, sugar, bicarb and Nutella to form a dough.

3. Next roll into small balls and place on the tray, pressing down in the centre with your thumb.

4. Bake for 10-15 minutes, they will still be soft but take them out to cool down.


These cookies are really nice, quite sweet because of the sugar and chocolate but also chewy. The Nutella Cookies are a great after dinner snack for children!!

Jammie Stars

I’ve did a similar recipe previously but the biscuits were peanut butter flavoured, whereas these biscuits are a typical biscuit recipe. Since we don’t need the egg whites you can use it for a nose mask adding a little lemon juice and apply using tissue 😀

Makes 15

Ingredients
225g butter
140g caster sugar
1 egg yolk
1 tsp vanilla extract
280g plain flour
5 tbsp strawberry jam

Method
1. Put the butter and sugar into a bowl and mix well, beat in the egg yolk and vanilla extract. Next sift in the flour and stir until the mixture forms a dough. Then wrap in cling film and leave in the forms fridge for 1 hour.

2. After the hour, set the oven to gas mark 5 and line 2 trays with parchment paper. Unwrap the dough and roll out to 5mm thick. Use cutters to cut out the biscuits and a smaller cutter for the star shape. Make equal amounts of the top and bottom of the Jammie Stars.

3. Bake them in the oven for 10 minutes and leave to cool down. Once cool spread with jam on the bottom biscuit and place the top biscuit on top.


You could use any flavoured jam of your choice or use chocolate spread!! They look so magical :O

These are 10 easy steps to follow and make the most of everyday!!

10. Get a goodnights sleep, tomorrow is full of opportunity and great potential so take 10 minutes to clear clutter and refresh your mind.

Cute Carrot Cupcakes

A little on the healthy side with the addition of carrots and makes lovely moist cupcakes.


Ingredients
175g light sugar
200g self raising flour
1 tsp bicarbonate soda
2 tsp mixed spices
Zest and juice of 1 orange
2 eggs
150ml sunflower oil
200g carrots

Method
1. Set the oven to gas mark 4 and prepare 12 cupcake cases into a muffin tin.

2. In a large bowl mix the sugar, flour, bicarbonate, mixed spices and zest together. Next in a separate bowl whisk together the eggs, oil and orange juice then stir into the dry ingredients adding the grated carrot last.

3. Evenly divide the mixture between the cupcake cases and bake in the oven for 25-30 minutes.

A super nice, quick and easy recipe, this would also taste great topped with a cream cheese frosting!!!

We all get Spots/Acne

It’s not your fault you have acne!

Maybe your skin just functions differently, you have larger pores which produce more oil. It’s not a problem your skin is just more sensitive to acne bacteria and hormonal fluctuations.

Be kind to your skin: stay away from  harsh products/cosmetics and aggressive techniques because they’re likely to cause inflammation. Be gentle and try to use less products that are organic or natural. Also don’t over exfoliate!!

If you ever find yourself thinking ‘I don’t like my skin’ quickly stop yourself because saying those words won’t help, find a good distraction or do something productive.
Be good to yourself, mind, body and soul. Exercise daily, get 7+ hours sleep, write down your thoughts and relax.
