Sometimes the thought of meditation can seem a bit hmmph! You might be feeling like ‘is meditation even for me?’ Well meditation is for anyone and everyone with amazing benefits that your body will thank you for.

1. Be smart about the time of day you choose to meditate for example in the morning when you initially wake up it is usually quiet, your mind is refreshed and momentarily in a peaceful state.

2. Kindly put your thoughts aside and re-center yourself if ever you feel like your mind is wondering. It is very normal for many thoughts to enter your brain, simply acknowledge them but don’t let them take over.

3. Read books, spend time with vibrant people and enjoy natures wonders, stimulate your mind with positivity so that you are aware of your consciousness.

Remember: stay consistent and be focused…

Orange Jaffa Cakes

Hi everyone I’ve got another recipe from Homemade Memories by Kate Doran, she has such great recipes 🙂 if you love jaffa cakes then this recipe is perfect for you!

I love the light cake at the bottom topped with the orange jelly and covered with dark chocolate, to be honest jaffa cakes aren’t my favourite but when homemade they taste so good.

To make the orange jelly you’ll need:
60g castor sugar
Peel from 1 orange
3 sheets of gelatin leaves
100ml orange juice (from 2 oranges)

For the cakes:
40g butter
60g icing sugar
20g plain flour
40g ground almonds
2 egg whites
Pinch of salt

To finish:
120g dark chocolate

For the method
1. For the jelly combine 120ml water with the sugar and orange peel in a saucepan. Bring to the boil then simmer for 10 minutes until reduced by half. In the meantime line a square tin with cling film. Soak the gelatin leaves in cold water for 5 minutes.

2. Remove the syrup from the heat and strain into a jug. Squeeze the water from the gelatin leaves and add to the syrup mix and stir until dissolved, pour into the square tin and chill for 2 hours.

3. Place the butter in a saucepan on the stove until the butter just starts to melt. Allow to cool and use a brush to grease a 12 hole muffin tin.

4. Preheat the oven to gas mark 5. Sift the icing sugar and flour into a bowl and whisk in the ground almonds. Add the egg whites, salt and melted butter and whisk to a batter. Divide between the muffin tin holes and bake for 10- 12 minutes, remove and leave to fully cool.

5. Once the jelly has fully set, use a cutter to cut out discs of the jelly and carefully place on to of each cake. (If you don’t have cutters just roughly cut circles using a bread knife)

6. Melt the chocolate in a heat proof bowl over a pan of simmering water and leave to cool for 10 minutes. Spoon 2 tsps of chocolate over each jelly disc and leave to set.

Mini Update

So I really feel like I have been so distracted lately with life and I have not been paying as much attention to my blog as I would have liked, I don’t always get the chance to do baking throughout the week which is why I decided to incorporate Monday Quotes and a Review in my blog each week as well as a recipe. This was a good idea however I feel like the simple dynamics of my blog is changing and it is not where I would like it to be. I loved posting Monday Quotes because I found it so amazing that anyone can be inspired by just a few words and I enjoyed sharing my reviews of products with people in case they had similar views on natural/organic products like I do. Now I want to put both of these to rest for the time being and keep the main focus on food, through my studies at University I have learned so much about food and really would love to change my diet so that it is more nutritious and healthy. I will be sharing these recipes on my blog.

My Baking Disaster

It was a normal day when I decided to do some baking, I weighed out all the ingredients and followed the method as I do, then when it came to finding a cake tin I realised there wasn’t one that would fit properly. Nevertheless I thought ‘I’ll just use this one surely it won’t rise that much’ anyway when I put it in the oven after about 20 minutes it had risen vastly and started pouring through the oven racks and onto the bottom of it, literally the cake batter was EVERYWHERE!!!

Anyway I still decided to let it finish baking and this is what was left :O I didn’t take any pictures of the oven as I was too busy cleaning it up.

What was left of the cake

There were some Malteasers in the cupboard which I thought would be a good cover up, so using a basic buttercream recipe I covered the entire cake then cut all the Malteasers in half and pressed each piece onto the cake. It actually looked pretty good if I’m honest and no one knew what happened in the oven 😀

*Morale of the story: if your doing something and it doesn’t turn out how you planned don’t stress because there’s always another way.

Review: Vanilla Essential Oil

The one that I have is actually blended with jojoba oil and sunflower oil but it still has that sweet vanilla scent when I use it.

Essential oils can literally be added to so many beauty products homemade or not such as:
Shampoo
Conditioner
Deodorant
Moisturiser

You can add a few drops (5-6) to your bath water for an extra relaxing bath with aromatherapy benefits 🙂 they can also be added to carrier oils if neat and used for body massaging. Essential oils can be mixed in with homemade air fresheners for a light fragrant smell.

There are actually over 90 essential oils each with there own health benefits and they are sold in many shops, this one was from Holland and Barratts for £5.99 the vanilla essential oil has a comforting scent and can reduce the thoughts of stress and anxiety through it’s soothing qualities.

Sweet Sesame Seed Chicken

INGREDIENTS
3 large chicken breasts
4 tbsp honey
2 tbsp sesame oil
2 tbsp soy sauce
1 tbsp sesame seeds

METHOD
1. Firstly dice the chicken breasts into small squares then combine all the ingredients together except the sesame seeds and leave to marinade for 4 hours or over night.

2. Preheat the oven to gas mark 5 and cover a baking tray with parchment paper, also tare off enough foil to fit over the top.

3. Then tip the marinaded chicken onto the tray putting 3-4 pieces on a cocktail stick and cover with foil, bake in the oven for 20 minutes.

4. After the 20 minutes take out, remove the foil and sprinkle with the sesame seeds, put back in the oven for 10 minutes.

I ate my chicken with steamed broccoli and oven fries, I think using the cocktail sticks adds a difference to the dish and they are a great to serve for any occasion.

Review: Lily Lolo Eyebrow Duo

So I think my eyebrows are probably my favourite part of my face to do, I really wish I had thicker eyebrows but I don’t so I just fill them in instead. I actually tried the castor oil on my eyebrows and eyelashes but it didn’t thicken or lengthen either however it did keep them moisturised and soft.

My very used powder

I’ve been using this eyebrow duo powder for so long now I can’t imagine using anything else. I love that it’s a powder so when applying it to your brows it can be as natural or dark regarding on what you like, I always fill mine in super dark 🙂 and it comes with the gel to keep those brows in place.

I firstly brush my eyebrows using the spooli brush and apply the powder using the angled brush which fills out my brows accurately with precision! The powder is light in texture and can be applied on heavy or natural, even though it’s a mineral powder it literally lasts all day long and washes off easily too.
