Lemon and Poppyseed Cupcakes

I feel like I am forever making sweet things so I’ve decided to try something a little different….. lemon and poppyseed cupcakes!! I actually saw this recipe ages ago but only just decided to bake them after wanting to try something new. The recipe was posted on Twitter by Lorraine Pascal and it was super simple and different to what I usually do so I thought why not.

175g self raising flour
1/2 tsp bicarbonate soda
110g castor sugar
Zest and juice of a lemon
70g melted butter
175g milk (I used almond milk)
25g poppyseeds

1. Firstly prepare your cupcake tray with 12 cases.

2. You can literally just put all the ingredients into a bowl and mix vigorously until well combined. It may be easier to use a handheld whisk if you have one but both methods work great.

3. I then used a ladle to equally fill each case with the mixture and put into the oven for 20 minutes.

4. Enjoy whilst slightly warm.

Okay, so my end thoughts on these cupcakes are undecided, I am so used to eating and enjoying sweet baked foods that it will take some time for me to appreciate the ingredients used such as poppyseeds and lemons however I know that they are much healthier because they contain less sugar and the poppyseeds are full of nutrients.

Recipe made 15 cupcakes

I definitely want to start looking at different recipes and see what alternatives I can use to have the same great taste with added health benefits.

Review: Dr Organic Virgin Coconut Oil Skin Lotion

This week my review is on my favourite skin lotion, from Holland and Barratts at £7.49

I definitely think the price is reasonable because you get 200ml in the tube which will last for ages. A little goes a long way, it’s really absorbed into the skin and doesn’t leave your hands feeling sticky or a weird layer over your skin like other lotions do. It’s best in my opinion to use this lotion after a bath or shower because it is really moisturising and always leaves my skin super soft.

The lotion comes out of the tube with a smooth consistency and white colour. The aroma is sweet, light and lasts a while so you may get compliments throughout the day 🙂

Also I really love the shape of the bottle because it doesn’t take up a lot of space and the lid is very secure so you can carry it around without the worry of it leaking.

What’s your favourite lotion?

Monday Quotes

Try not to stress about your current situation, just know that it is one of many things you will experience in life, try not to let it consume you and take over otherwise you’ll miss out on the good things.

How to deal with failure

Regardless of the situation at first it may seem like the worst thing ever and that there’s nothing you can do to fix or change the situation but just remember….there’s always light at the end of the tunnel 🙂

It doesn’t really matter specifically what has happened in your life as long as you stay hopeful, acknowledging and accepting what has happened will enable you to move on. This is the first stage of you becoming stronger within.

Here are some tips to help deal with failure:

1. Write down your feelings, thoughts and emotions.

2. Talk through the problems with someone.

3. Organise a plan to make things better.

4. Pray! Even if you are not religious you may have/feel a spiritual connection with the universe which will help ease the pain of your problems.

I really hope this helps if anyone is going through anything they wish they weren’t, life will always be full of obstacles and it’s how you decide to deal with them that determines your future

Mini Bakewell Tarts

This was such a great recipe to bake because it had 2 main components that combine to create these mini bakewells. I think people often use a shallow bun tin however I don’t have one of those and just used a cupcake tray instead.

Shortcrust pastry
175g plain flour
95g diced, chilled butter
1tsp icing sugar
1 egg yolk

50g butter at room temp
50g caster sugar
2 eggs
50g ground almonds
3 drops almond extract
2 heaped tbsp raspberry jam
12 raspberries (I defrosted frozen berries but fresh ones are even better)
Large sprinkle of flaked almonds

1. Put the flour, butter and icing sugar into a bowl then rub together until the mixture looks like breadcrumbs. Put in the egg yolk and 1 tbsp of cold water, using a circular motion with your hands mix until it forms a dough. Shape into a thick disc and chill in the fridge for 20 minutes.

2. Roll out the dough on a lightly floured surface to the thickness of £1 coin, use cutters to cut out circles, place in the tin neatly pushing out any air bubbles and chill for a further 10 minutes.

3. In the meantime preheat the oven to gas mark 5 and make the almond filling. Beat the butter and sugar until pale, start to beat in the eggs bit by bit then stir in the ground almonds and almond extract.

4. Take the tray out of the fridge and spoon 1/2 tsp of the jam into each pastry circle. Now spoon some of the almond filling over the top of each bakewell, push a raspberry into the centre and  sprinkle with a few flaked almonds.

5. Bake for 20 minutes until slightly golden, wait until completely cooled then transfer to a wire rack.

Usually when making tarts the pastry is often blind baked to ensure it is cooked through fully but because we are rolling out the dough quite thin there is no need.

Review: Deep Cleansing Nose Strips

Sometimes I just need to give my skin that extra care and these deep cleansing nose strips are perfect. I have only been using them consistently once a week for the past couple of weeks but each time I use them my nose feels so much more free and unclogged of excessive ‘dirt’ and ‘natural oil’.

So I brought these from Holland and Barratts for £2.99 a box of six which is around 50p per strip, they do sell nose strips in most drug stores in the UK such as Bodycare, Superdrug and Boots at a range of prices.

Benefits to the nose:
– removes black heads
– strips away unnecessary dead skin
– cleans clogged pores

The nose strips come in a nice little box each wrapped individually inside with instructions on the box and on each packet which are easy to follow and you only need 10-15 minutes to dry.

There are other DIY homemade remedies to make yourself usually consisting of egg whites but using these strips are a little more time effective.

*Obviously do be cautious if you have any skin conditions or sensitivity around your nose area and when peeling off use water if it becomes too painful*

I would really recommend buying nose strips because they’ll make your nose feel so much softer and happier ❤

Smooth Peanut Butter Biscuits

Hey everyone!! Today I thought I would experiment using peanut butter again after making the successful peanut butter jammie dodgers you’ll find that recipe here http:// ablovesfood.wordpress.com/2015/08/21/peanut-butter-jammie-dodgers/comment-page-1/

I actually love peanut butter both smooth and crunchy so I’ll probably be making more peanut butter inspired food 🙂

Okay so the ingredients are:

180g plain flour                                          50g castor sugar
4 tbsp peanut butter
1 egg
100g butter

And the method is:

1. Set the oven to gas mark 4 and line two baking trays with parchment paper.

2. Place the flour, sugar, peanut butter, egg and butter into a large bowl then mix together until a soft dough is formed.

3. Flour the work surface and rolling pin slightly then roll out the dough to about the thickness of two £1 coins, the using any mini cutter of your choice press into the dough and put on the baking tray. (this recipe does make quite a lot so you may need to re use a tray after the first batch is baked)

4. Gently press the back of a fork into each biscuit and bake in the oven for 20 minutes (maybe a little less as i forgot to preheat mine)
once baked leave to cool on a wire and dust with icing sugar before serving.

Review: Mineral Foundation

This was my first ever powder foundation that I brought from PHB Ethical Beauty. The cost of it was £18.95, the colour is cinnamon and they have a range of colours to suit most skin types but mainly paler tones.

I would really recommend checking out their website http://www.phbethicalbeauty.co.uk/natural-organic-fairtrade-vegan-paraben-free-cruelty-free-make-up/mineral-powders-face/Mineral-Foundation and having a good read because they have lots of information about the ingredients used in their products and also what they don’t use!

Even though I don’t wear makeup every single day I still want the best for my skin when I am wearing foundation. I mostly use the mineral foundation over my concealer around my eyes in attempt to cover up the dark circles and it works really well, only on special occasions do I apply it to my entire face to get that smooth full coverage.

The foundation is so light in terms of texture and blends in with my skin tone giving me a really natural appearance.

All you have to do is twist and gently shake to release the foundation onto the lid.

You choose how much you want to be released from the container which is super cute and small making it easy to carry around in your bag.

I really love that the bottom of it is see through so you get to see the exact colour, what it looks like and how much you have left.

*The only negative which really applies to all loose powders is that it can be a bit messy and fall onto your clothes so my advise is to do your makeup before getting dressed or wear a robe 🙂
