Cheesecake

My new favourite dessert to make is lime flavoured cheesecake 🙂 it’s so simple but super tasty. This can be enjoyed by anyone.

I put my own touch on them by putting the mixture into little glasses which look great at dinner parties.

I really enjoy baking or making desserts these days because it’s so much more healthier than buying junk food which contains a load of bad ingredients. Not only that but you also know what ingredients are being used. Even though the cheesecake does contain cream cheese which can be quite fattening when eaten in moderation it’s okay 😀

Oh Sugar!

When looking for added sugar in foods it’s not always so easy as spotting the word ‘sugar’ in the list of ingredients because it has many names.

Here are the main ones to look out for:
– sucrose
– fructose
– cane sugar
– crystalline fructose
– fruit juice concentrates
– high fructose corn syrup
– corn syrup

Ready Steady Cook!

Ready steady cook was one of my favourite shows to watch when I would come home from school. I always used to think it was so cool and creative how they would make such delicious looking meals with a random bunch of ingredients.

Here I have: spaghetti, pork loin steaks, sugar snap peas, red wine, plum tomatoes and parmesan cheese

I decided to make something simple and most of these ingredients you’ll probably have in your kitchen (or could easily be replaced)

Once the pork is almost cooked put on the spaghetti and sugar snaps and you dinner is almost ready 🙂

This was such a wonderful meal for the family however I wasn’t that keen on the sugar snaps but I still ate them.

Pitta Bread Pizza

Sometimes for dinner or lunch you just want something low maintenance and pitta breads are the best option.

I’ve used:
– tomatoe puree
– sweet corn
– tuna
– cheese

You can keep the toppings super simple or go for something more adventurous then pop it in the oven for 10-15mins and dinner is served.

* this is something that children will enjoy too, a great activity for them to do after school getting them involved in their food.

My Mehndi

I love trying out new things so I decided to buy some henna, you definitely need a lot of practice and a steady hand to do great art but as a beginner I think I did a good job 🙂 now I can’t wait to try out more design’s.

In terms of body art its a great alternative to getting a tattoo because it’s temporary and you can change the design as often as you like!

I think the tradition behind mehndi is very beautiful and it has great meaning for many cultures.

Strawberry Swirl Cupcakes

I’ve been getting into baking cupcakes a lot recently because they’re so simple to make and you get to design them however you like.

I tried to make some with a strawberry jam center but it just sank to the bottom, I think I made the holes too deep.

* when making the holes spoon the mixture into the cupcake cases then get a small bowl of warm water and dip your fingers into the water to make the holes in the cupcakes.

Add some jam into the holes then cover with more of the mixture.

Now ready for baking

The strawberry swirls turned out perfect 🙂 once you’ve spooned in the mixture put some jam on top and do circle motions in the middle using a cocktail stick.

Throughout all your struggles in life you must always remember to enjoy yourself and SMILE!!! Whenever you feel like things are ‘getting too much’ just take some time out to do something for yourself.

1. Write down your thoughts and feelings into a journal.

2. Do something you used to love doing as a kid.

3. Listen to your favourite songs and have a dance around the house.

4. Treat yourself to a pamper e.g homemade facial, foot spa or a manicure.

Salmon for dinner.

This beautiful dish is made up of long grain white rice, mange tout and a darne of salmon.

I absolutely love salmon, it’s probably my favourite choice of fish. I don’t eat it too often but when I do it’s always a delicious treat 🙂

The salmon was baked in the oven and once cooked I simply poured the juices over the rice for extra flavour.
